What many people don’t understand is that some tip out practices mean that your waitstaff pays for you to eat if you don’t tip them, says Marley.
There’s no standardization to how servers are expected to share tips with the other staff, with some establishments taking a percentage of tips received off the top for kitchen staff and hosts, and with others taking a percentage of sales – practices known as “tip out”.
Marley said that although she loves her job, the pay is what makes it worth it,
